2 lbs (907 gr/9 cups) cauliflower, cut in small pieces
2 bunches green onions, sliced (125 gr/4.3 oz/2 cups)
14 large egg whites (33 gr each)
6 large egg yolks
180 gr Miracle Whip Light (12T or 3/4 c)
120 gr yellow mustard (8 T or 1/2 c)
1 tsp chili (or cayanne) pepper
1 tsp salt
Also makes a great sandwich or wrap. What makes this most takes like potato salad is that I use the same ingredients when I use red potatoes (versus cauliflower) in my favorite potato salad. I likely used more mustard and chili pepper than I would with potatoes.
Allow to cool naturally.
Hard boil, peel, and cool eggs
Combine all ingredients and mix well.
Makes about 4.25 lbs or 68 oz / 22 veggies = 3.1 oz
About each 6.2-oz serving = 2 veggie serving
