Cajun Shrimp and Rice

Introduction

A spicy, slow-cooker meal. A spicy, slow-cooker meal.
Number of Servings: 6

Ingredients

    1 lb. shrimp, cooked, peeled and deveined
    2 cups low sodium chicken broth
    2 14.5-oz. cans diced tomatoes, no salt added
    2 cloves garlic, chopped
    1 cup chopped onions
    1 cup chopped bell pepper
    8 oz. wild rice mix (about 2 pkgs. Rice A Roni)
    1 tsp. cajun blackened seasoning
    1 tsp. tabasco sauce (add more to taste)


Tips

I like mine pretty spicy, so I added additional tabasco sauce. You can add more or less to fit your tastes.

Directions

Combine shrimp, broth, tomatoes, garlic, onions, bell pepper, wild rice mix (including seasoning), blackened seasoning and tabasco sauce in a crockpot.

Cook on high for 3.5 hours or on low for 6-7 hours.
