Whole Wheat Pancakes for 1 or 2

Introduction

This is a recipe I developed to be low fat and enough for one or two people. This is a recipe I developed to be low fat and enough for one or two people.
Number of Servings: 2

Ingredients

    1/4 C whole wheat flour
    1/2 tsp baking powder
    1/4 tsp baking soda
    1/8 tsp kosher salt
    2 tsp sugar
    1 large egg
    1/4 C buttermilk
    2 T unsweetened applesauce

Tips

After heating the griddle to medium heat, you may need to reduce the heat slightly.


Directions

Mix the dry (flour, powder, soda, salt, sugar)ingredients together.
Mix the wet (egg, buttermilk, applesauce) ingredients together.
Pour the wet into the dry and stir together.
Allow to rest about one or two minutes.
Dip 1/4 C of batter onto to a medium hot griddle brushed with butter. When bubbles form after about two minutes turn the cakes over with the spatula.


Serving Size: makes 2 6 inch pancakes or 4 4inch pancakes
