Introduction

Ingredients

    2 fresh large raw yard egg yolks
    1 tablespoon fresh lemon or lime juice or vinegar
    1 tablespoon Dijon mustard or 1 tsp ground dry mustard
    1 cup very light TASTING olive oil, macadamia nut oil, coconut oil or avocado oil (or a blend of any of these!)
    3/4 teaspoon unrefined sea salt
    1/8 tsp onion powder *optional
    1/8 tsp garlic powder *optional
    1 teaspoon raw local honey *optional

Tips

Makes 20 half-ounce servings. Store in the frig for 7-10 days.


Directions

Place all ingredients into a wide mouth pint jar in the order listed. Insert a Cuisinart Smart Stick or other stick style hand held blender, holding the blade against the bottom of the jar and process until mixture begins to thicken (about 10 SECONDS). Continue processing, drawing the blender slowly up through the mixture until you reach the top and all the oil is incorporated and the mixture is thick (about another 30-45 seconds) and the oil is completely emulsified. Move the blender up and down several more times if needed.
Serving Size: 1 tablespoon (1/2 ounce)= 104 calories
