beans and quinoa

Ingredients

    1 cup water
    1/4 cup dry quinoa
    1 can black or pinto beans, rinsed and drained
    1 can corn, rinsed and drained
    1 small onion diced
    2 garlic cloves diced
    1/4 cup vege broth
    1/4 tsp cumin
    1/4 tsp salt
    1/4 tsp black pepper
    1 cup cilantro

Directions

saute onion and garlic.
add beans, water and quinoa and spices. bring to a boil, simmer until liquid is absorbed.
Add corn, tomato and cilantro, cook till heated through.
