20 large fresh shrimp, peeled
4 Tbsp. olive oil
1/3 cup spring onions, sliced
1 clove garlic, minced
1/2 cup fresh parsley, clipped
salt & pepper
juice from fresh lemon
Dip out shrimp, leaving liquid in pan and keep warm in oven. Squeeze lemon juice into pan and cook down till slightly thick. Add back to shrimp and mix together.
Serve immediately (3 generous servings)
