Introduction

This is a recipe that I was given many years ago - by a Nigerian I worked with called Kwame - he was always cooking something new and interesting. This is a recipe that I was given many years ago - by a Nigerian I worked with called Kwame - he was always cooking something new and interesting.
Number of Servings: 15

Ingredients

    1 lb mangos (they should be mature but unripe)
    1/2 lb saltanas
    2 tsp ground ginger
    1/2 tsp mixed spice
    2 tsp salt
    1 pt vinegar
    1 lb brown sugar
    1/2 lb onions
    2oz peanuts or slivered almonds
    1/2 tsp cayenne pepper

Directions

Slice the mangos, mince or finely chop onion.
Mix all the ingredients together in a heavy based saucepan.
Bring to the boil, reduce heat and simmer for 20 - 30 min until the mixture thickens, stirring all the time.
Pour into hot sterilised jars, and seal while hot.


Serving Size: Makes 15 - 1 Tbs serves
