Mixed & Mashed Potatoes

Introduction

A simple side dish made from white or red potatoes mixed with sweet potatoes, boiled, mashed and seasoned. A simple side dish made from white or red potatoes mixed with sweet potatoes, boiled, mashed and seasoned.
Number of Servings: 6

Ingredients

    550-grams diced white or red skinned potatoes, leave skin on (I used 5 medium-size locally grown white potatoes)
    300-grams diced sweet potatoes/yams, peeled (I used one fairly large sweet potato)
    ½-teaspoon sea salt
    2-tablespoons unsalted butter
    1-tablespoon minced garlic
    ½-teaspoon black pepper
    1-tablespoon fresh chives, finely chopped
    ¼-cup fat free sour cream

Directions

Boil diced potatoes and sweet potatoes in a large pot filled with water to which sea salt has been added. Drain when fork tender.

While potatoes are cooking, in a small saucepan, melt the butter, add the garlic and saute until the garlic starts to brown slightly. Remove from heat and stir in pepper, chives, and sour cream.

Use an electric mixer to mash the potatoes, adding the sour cream mixture as you go. If the potatoes are too dry for your liking, add a bit of milk (milk is not included in the nutritional information).

Serving Size: Makes 6 ¾-cup servings
