Bean-Free Hummus (raw)

Introduction

This hummus is higher in fat and has a texture more like a nut butter than a hummus. But it is wonderfully delicious and easier to digest than traditional hummus--just eat in moderation. Do not substitute roasted tahini for the raw tahini as the flavor will be too intense. This hummus is higher in fat and has a texture more like a nut butter than a hummus. Number of Servings: 48

Ingredients

    1 C. raw tahini
    4 C. chopped zucchini
    1/2 C. lemon juice
    1 Tbs. cumin
    1 tsp. salt (or to taste)

Tips

Garnish with a little roasted paprika.


Directions

Process all ingredients in a food processor until smooth and creamy.
