Patty's Macaroni Salad

Introduction

This is the macaroni salad we've been making in my family for years. You could use low fat or low calorie Mayo if you want to lower the calories. This is the macaroni salad we've been making in my family for years. You could use low fat or low calorie Mayo if you want to lower the calories.
Number of Servings: 24

Ingredients

    1 lb bag Salad Macaroni
    3 large eggs, boiled
    1/2 medium onion chopped fine
    2 Tbs pickle relish
    2 Tbs mustard
    1/2 Cup Mayonnaise

Tips

I use a food processor to dice the onion, and a cheese grater for the eggs.


Directions

Cook the macaroni according to package directions, and boil the eggs. drain and allow to cool in fridge.

After the pasta and eggs are cooled, finely dice the onion and eggs. Add remaining ingredients to bowl and mix thoroughly. refrigerate until ready to eat.

Serving Size: Makes 24 3/4 cup servings
