Ingredients

    10 cups chicken stock
    3 tbsp chopped fresh cilantro
    1 tbsp fresh lime or lemon juice
    2 tsp sesame oil
    3 green onions, thinly sliced
    1 tsp finely chpped fresh ginger
    4 oz rice vermicelli noodles
    1/2 lb very thinly sliced checken (fondue cut)
    soy sauce
    fresh bean sprouts
    fresh cilantro

Directions

In a large saucepan, bring stock to a boil. Add chopped cilantro, juice, sesame oil, green onions and ginger. Let simmer 2 to 3 minutes over medium heat.

Add vermicelli noodles and cook until tender.

Serve at once, when chicken is no longer pink inside, with soy sauce, bean sprouts and cilantro for garnishing.
