Introduction

This is a quick, spicy dish, wonderful for winter comfort food. This is a quick, spicy dish, wonderful for winter comfort food.
Number of Servings: 12

Ingredients

    2 Boxes New Orleans Style Red Beans and Rice dinner.
    1/2 stick light margarine
    2 Cans Red Beans
    ! can diced tomatoes and green chilies
    6 links smoked sausage (chopped)
    1 cup chopped onion
    Season to taste:
    chili powder
    salt
    pepper
    cumin
    cayenne
    adobo seasoning

Tips

I taste the 'liquid" after adding seasonings. Remember most spices become more pungent as they cook.


Directions

Follow instructions on rice dinner for water amounts. Put water, rice, seasoning pack, and all other ingredients into pot. Cook over medium high heat until boiling. Cover pot, reduce heat, and simmer until rice is tender.

Makes 12 healthy servings.
