Old El Paso Chicken Enchiladas

Introduction

This is the recipe from the back of the Mild Enchilada Sauce can. The chicken is cooked in the crock pot during the day & the enchiladas are assembled & baked after work for dinner. Ingredients

    1 lb boneless, skinless chicken breast
    2 cans (10 oz ea) Old El Paso enchilada sauce
    1 1/2 cups (6 oz) shredded cheddar cheese
    10 La Tortilla Factory Low carb, high fiber Original whole wheat tortillas

Directions

Place chicken in crock pot & cook on low until done (do not add anything else to the crock pot - only the chicken). Shred chicken w/fork. Stir in 3/4 c enchilada sauce & 1 C cheese. Spoon filling onto tortillas. Roll up & place seam side down into 13x9 inch glass baking dish. Pour remaining enchilada sauce over top; sprinkle w/remaining cheese. Bake at 375 for 15-20 mins.
