Almond Oven Fried Chicken Breasts

Number of Servings: 6

Ingredients

    6 boneless/skinless Chicken Breast,
    Melba Toast, Wheat, 8 toast
    Almonds, 0.5 cup, sliced
    Basil, 1 tbsp
    Pepper, red or cayenne, 1 tsp
    Non Stick Cooking Spray, 6 servings
    Egg, fresh, 1 large
    Dannon Plain Non-Fat Yogurt, 0.5 cup
    Sesame Oil, 1 tsp

Directions

Preheat oven to 350*F.
Whiz melba toast along with sliced almonds, basil and cayenne pepper. Pour into pie plate and set aside.

Whisk egg and yogurt and pour into 2nd pie plate.

Pound chicken breasts flat, dip in egg mixture, shake excess off, and dip in toast/almond crumbs. Shake off extra crumbs.

Place breaded chicken on pan that has been sprayed with cooking spray. Spray top of chicken with spray as well.

Bake for 30 minutes, turning once.

1 serving = 1 breast.

Goes great with Cheesie Brocco-flower and a mixed green salad.
