Broccoli Casserole

Introduction

This is a tailgate vegetable casserole passed down by an aunt. You can add any vegetable you like. This is what I had on hand. For this casserole I normally use, broccoli, asparagus, carrots, baby bella mushrooms, corn, and cauliflower. It's really a good side dish for any type of meat, poultry, or fish. Ingredients

    Fresh broccoli, not frozen--as much or less as you like
    1 to 2 cups carrots, raw
    *2 or 3 baby red potatoes (diced with skin)
    3 oz frozen corn or raw off the cob
    *1/4 cup Ragu double cheddar sauce
    1/2 cup sourcream, any type of brand
    1/2 cup cream of chicken soup
    1 oz shredded cheddar cheese or colby (reduced fat)

    Where you see an asterisk, these items are optional...I no longer eat potatoes but my children do, so I put potatoes on one side the casserole and sometimes I use the cheddar sauce if I want cheesy.

Directions

In large sauce pan boiled carrots until tender
Do same for potatoes, but partially cook
If using corn off cob, add to boiled carrots to cook

Preheat oven to 350 degress

In large casserole dish add remaining ingredients, once carrots and potatoes are cooked add carrots, last adding potates to one side dish, unless you eat them you can add to entire dish

Bake for 35 - 40 minutes or until golden brown
