Very Filling Soup

Ingredients

    2t. Canola Oil
    1 1/4# lean ground beef(turkey or chicken breast)
    1 Onion, Chopped
    2 Garlic Cloves
    1 Large Green Pepper, Chopped
    8 ounces Fresh Mushrooms, Chopped
    1-14 ounce can Diced Tomatoes
    46 ounces V-8 Cocktail Juice
    1T. Cumin
    1/4cup Cilantro & Parsley
    1-14 ounce can Black Beans, Washed & drained
    1/8t. cayenne
    Hot Sauce ( Optinal)

Directions

Heat oil & saute meat. Add onion,garlic & peppers.Cooking about 5 minutes. Stir in remaining ingredients, except for mushrooms, cilantro and parsley. Cover & simmer 20 minutes. Stir in mushrooms, cilantro and parsley. Cover and simmer 10 minutes longer. Will last in frig for about 5 days, also freezes well.
