Butter Bean Salad

Introduction

This is based very closely on a Rachel Ray recipe, just tweaked to my own preferences and with less oil. It doesn't need to sit for more than 15 minutes or so for flavors to blend, though it does get better with more time to marinate. Ingredients

    1 can butter beans, drained and rinsed
    1 T olive oil
    Juice of 1 1/2 limes
    1t-1T hot sauce
    1 t cumin
    1/3 t chili powder
    1 t minced garlic
    2-3 T chopped fresh cilantro
    1/2 bell pepper, chopped
    1/4 medium onion, chopped
    1/4-1/1/3 medium zucchini, chopped

Directions

Combine lime and seasonings, then olive oil. Stil in rest of ingredients.
