2 cups diced mushrooms
1/2 cup chopped onion
1 cup diced celery
1/2 cup frozen corn kernels
1/2 cup diced bell peppers
1 tsp thyme
2 cloves garlic, minced
1/2 cup vegetable stock
1. I use my own homemade veggie stock with no added salt. Sodium content will be higher if you add salt or use commercial stock.
2. I buy various colored peppers, dice them and freeze them all together, this way I always have a colorful mix for my recipes.
Spray pan and add garlic, onions, corn, bell peppers and celery. Saute until onions are translucent. Add mushrooms and thyme, saute until mushrooms and are soft. Add stock and heat until stock is reduced by half or more. Spoon over salmon, other seafood or whatever you want.
