1 bag Pecan halves 2 cups sugar 1 cup water 2 tsp. salt 2 tsp. cinnamon 3 tsp. vanilla
Roast pecan halves in oven at 350 degrees for 15 minutes. While roasting add all other ingredients to pan except vanilla. Stir until mixture boils. Stop stirring after boiling. Using a candy thermometer, cook syrup until it reaches 260 degrees (soft ball). Take off heat and add vanilla and stir. Add pecans and stir until mixture gets a little sugary and starts to set. Turn out onto cookie sheet. Let cool and separate halves.
Serving Size: Makes about 20 servings about a cup each
