This is our family favorite holiday breakfast casserole. Prep doesn't take long if you pre chop and store all ingredients in fridge and beat the eggs and milk to complete and bake. This is a hearty family breakfast great to make extra and set up for holiday brunch with the friends and family. This is our family favorite holiday breakfast casserole. Ingredients

5 large eggs
2 c dice or shredded potatoes
1/2 c raw onion diced or minced
1 tsp salt
1/2 tsp garlic powder
1/4 c evap milk
6 links chopped of Jennie O turkey sausage
olive oil cooking spray 2 serv.
Tips
please note to store pre chopped potato in water with a squeeze of lemon to prevent discoloration. If using glass plan cooking time will vary
Directions
Preheat oven to 375 and spray bottom and sides of large casserole dish with cooking spray. layer the potatoes and spray one more time 6 sec spray layer the onions then the sausage. Beat eggs milk and dry ingredients and pour over just before baking. Bake for 30 to 45 minutes depending on oven, eggs should be fluffy yet firm. (suggestion serve) with whole grain toast and fruit. ENJOY!
