Angel's Chicken Chili

Introduction

Ingredients

    3 four-ounce chicken breasts, boneless & skinless
    2 cans red kidney beans
    1 can sweet low-sodium corn
    1 large vidalia onion, chopped
    1 green bell pepper, chopped
    1 jalepeno pepper, chopped and de-seeded
    2 cans chopped tomatoes (I use Rotel with chilis)
    2 cups gluten-free chicken broth
    4 cloves garlic
    Texas Pete hot sauce (to taste)
    1 tbsp ground cumin
    1 tsp corriander
    2 tbsp cilantro, fresh or dried
    1 tbsp black pepper
    1 tsp salt

    spices can be adjusted according to personal taste and preference. I add a dash here and there until it is right.

Tips

You can serve with tortilla chips, low-fat sour cream, and/or shredded cheese.


Directions

In a large pot heat a little olive oil. Add cut onions and garlic, sautee until soft and fragrant. Add bell peppers and jalepeno and cook with the onions for 2-3 minutes. Meanwhile cook chicken, covered, in a medium skillet until cooked through. Shred chicken. To onion/pepper mixture add tomatoes, corn (Partially drained) and beans (drained and rinsed). Add spices and broth, bring to a boil. Add shredded chicken. You can add water at this point if the soup is not the consistency you like. Cover pot and simmer for 30-60 minutes. Taste occasionally and adjust spices as needed.
