Introduction

Number of Servings: 8

Ingredients

    1.5 cups macaroni (dry)
    1 lb cheddar cheese
    .25 lb smoked gouda cheese
    1 cup milk (recipe is whole milk)
    2 eggs
    1/2 cup bread crumbs
    2 T melted butter
    1/4 cup melted butter
    1/4 cup parmesan cheese
    salt and pepper to taste

Tips

The mixture will be soupy-this is ok. Be sure to serve right away; it is better then than when reheated.

If working with a crock pot, do not cook for the 3 minutes over the cooktop and make sure the macaroni is barely al dente. Add an extra 1/2 c milk, then cook over low for about an hour to warm it up. I'd probably omit the breadcrumb topping entirely since it won't be browned in an oven.


Directions

Reserve 1/2 cup cheddar cheese for later.

Cook macaroni until al dente. Drain and return to the pan. Add 1/4 c butter and remaining chddar and smoked gouda and stir. Add eggs, milk, and salts/pepper and stir well. Cook over low-medium heat for 3 minutes. Pour mixture into 2 quart baking dish, top with 1/2 c reserved cheddar. Cook at 350 for 10 minutes. Stir in cheddar on top and add a topping of the breadcrumbs, parmesan, and 2 T melted butter. Bake for 15 additional minutes. Serve immediately. Serves 8.
