Addicting Penne with Asparagus
Submitted by: SPARKLING4GOD
Introduction
No joke...this is hard to stop eating! No joke...this is hard to stop eating!Number of Servings: 4
Ingredients
-
12 oz. uncooked whole wheat Penne Pasta
20 trimmed Asparagus spears, halved lengthwise
10 Cherry Tomatoes, split open or halved
2+ tsp. Sun Luck Chili Oil
Tips
If you don't have asparagus, add a bag of trimmed spinach leaves...that is just as yummy!
Directions
Cook pasta according to package instructions.
Meanwhile, saute the asparagus and cherry tomatoes on high heat for about 3 minutes. You may use oil or butter, but I usually use the chili oil to do this. Cover and set aside until pasta is finished. Rinse pasta and add the asparagus to the pasta. Adjust seasoning according to taste. I love this HOT so put way more than 2 tsp. of the oil on. If you did not add the oil during the saute process, stir it in at the end...or let each individual add oil to their own helping.
Serving Size: Makes at least 4 healthy servings
