Slow-Cooker Chicken Tortilla Soup with Black Beans

Ingredients

    1 1/3 pounds raw boneless, skinless chicken breasts
    1 (14.5 ounce) can diced tomatoes
    1 (8 ounce) jar taco sauce
    1 medium onion, chopped
    1 (4 ounce) can chopped green chile peppers
    3 cloves garlic, minced
    1 (14.5 ounce) can 99% fat-free chicken broth
    1 (14.5 ounce) can 100% fat-free, low-sodium chicken broth
    1 (14.5 ounce) can black beans, drained of liquid
    1 TBSP cumin
    1 TBSP chili powder
    1 teaspoon salt
    1/4 teaspoon black pepper
    1 bay leaf
    1 (10 ounce) package frozen corn

Tips

Can be made vegan by eliminating chicken and substituting vegetable stock for chicken stock.


Directions

Combine all ingredients in a large slow cooker. Stir to combine. Cook on high 4-6 hours or low 6-8 hours.

Remove chicken from soup and shred. Return chicken to soup, stir, and serve.

Top with fat-free sour cream, crushed tortilla chips or strips, shredded cheddar cheese, avocado or anything else that floats your boat!
