Salsa covered chicken thighs and veggies

Introduction

Bake chicken and veggies covered in salsa and then serve over Trader Joe's Harvest Grain Blend. Bake chicken and veggies covered in salsa and then serve over Trader Joe's Harvest Grain Blend.
Number of Servings: 4

Ingredients

    4-6 Skinless and boneless chicken thighs
    1 cup of salsa
    2-3 small zuchinni, sliced
    Half bag of Trader Joe's Harvest Grain Blend
    Non stick cooking spray

Tips

Sometimes cook chicken a little longer, just depends on the size of the thighs. I have also used a variety of different vegetables and/or rice instead of the grain mix. Versatile recipe with lots of options!


Directions

Preheat oven to 350. Spray baking dish with non stick spray and place chicken in. Pour salsa and cut up veggies over chicken and cook for 20 minutes. While the chicken cooks, cook the Grain blend according to package directions. Serve chicken mixture over grains and with a side salad.
