Zucchini Parmesan

Introduction

Number of Servings: 8

Ingredients

    aprox 670 g zucchini
    1 jar of Classico Florentine Spinach and cheese sauce
    3/4 C dry bread crumbs (80g)
    1/4 C flour
    1/2 C liquid egg whites
    250g light mozza
    1/4 C Kraft parmesan cheese
    1/3 C canola oil

Directions

Slice zucchini 1/4" thick. Dip pieces into flour, then egg, then crumbs. Heat oil over medium heat. Cook zucchini until golden (1 min per side) Put 1/2 C of sauce into a 8x12 pan (smaller lasagna dish). Place 1/3 of zucchini evenly in pan. Top with 1/2 c of sauce followed by 1/4 cheese. Repeat for second layer. For last layer, place remaining zucchini, remaining sauce and remaining cheese. Sprinkle with parmesan cheese. Cover loosely with aluminum foil and cook for 30 minutes. Remove foil and cook for another 20 minutes. Allow this to cool for about 5 min before slicing.
