Ingredients

1/4 tsp extra virgin olive oil
2 Tbsp whole wheat breadcrumbs
2 pieces cooked natural, nitrate-free low fat turkey bacon, cut into 1/4 inch pieces.
1/2 medium tomato, diced
4 tsp chopped chives
8 egg whites
Pinch sea salt
1/8 tsp freshly ground black pepper

Directions
Preheat the oven to 350 degrees. Heat oil in a small skillet over medium-high heat. Add breadcrumbs and sea salt. Toast, stirring occasionally, until golden brown, about 2 minutes. Set aside.
Place two ramekins on a baking sheet and coat each with cooking spray. Divide bacon, tomato, and half of the chives among the ramekins. Pour four egg whites into each ramekin and season with freshly ground pepper. Sprinkle each of the egg whites with half of toasted breadcrumbs. Place baking sheet with ramekins into oven and bake until whites have puffed up and are set, about 20 minutes. Remove and top with remaining breadcrumbs and chives. Serve immediately.
