Number of Servings: 12

Ingredients

    3 pounds pork shoulder
    2/3 cup freshly squeezed orange juice (about 1 large orange)
    1/3 cup freshly squeezed lime juice (about 1 large lime)
    9 cloves garlic (whole intact)
    1/2 tablespoon kosher salt
    1 tablespoon cumin
    2/3 cup beef broth
    corn tortillas
    sour cream, salsa, sliced avocado (optional)

Tips

I tweaked it for 4 servings for 3 dinners. Each serving is 4oz for 4 people for 1 dinner.


Directions

Use a 6 quart slow cooker. In a small bowl, combine the salt and cumin. Rub spice mixture onto pork. Place pork into slow cooker with the whole garlic cloves. Pour orange and lime juices and beef broth evenly over the top. Place lid on slow cooker. Cook on low for 8-10 hours. The pork should shred easily with a fork. If your meat is still fully intact after 8 hours, remove and cut into chunks, then return to the slow cooker. Cook on high for about an hour. Shred meat and allow to cool. Package in freezer bags, removing as much air as possible and seal.

To serve: Thaw and heat through. Serve carnita meat on warmed corn tortillas with desired toppings to include black beans, rice, onion, salsa.

Serving Size: Makes enough for 3 dinners. Serving size is 4 oz meat/4 servings per gallon bag.
