Chicken Hot Pot

Introduction

Light soup, slow cooker. Light soup, slow cooker.
Number of Servings: 1

Ingredients

    Water, tap, 3 cup (8 fl oz)
    Chicken Broth, 2.66 cup (8 fl oz)
    Onions, raw, 1 medium (2-1/2" dia), chopped
    Carrots, raw, 2 medium, sliced 1/2" thick diagonally
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long), sliced 1/2" diagonally
    Water chestnuts, 1 cup slices ( 1 8-oz can)
    Soy sauce, low sodium, 2 tsp
    Ginger Root, 2 slices (1" diameter, 1/4" thick)
    Garlic, 2 cloves, crushed
    Pepper flakes, red or cayenne, .25 tbsp
    Boneless, skinless chicken breast, 16 oz. cut into thin strips
    Tofu, firm, 0.5 block, cut into 1" pieces
    *Snow Peas, fresh, 0.5 cup
    Scallions, raw, 2 medium (4-1/8" long), sliced
    *Better Than Bouillion, Chicken, 1 tbsp

Directions

Combine water thru red pepper in 3.5 qt slow cooker and cook on low for 6-7 hours. Turn to hbigih and add chicken, tofu, snow peas, and scallions; cook another15 minutes, until chicken is tender.
