Black Bean Veggie Burgers

Introduction

These burgers went over well with my family. I prefer a soy burger but my hubby has a soy allergy. So this will have to do! :) These burgers went over well with my family. I prefer a soy burger but my hubby has a soy allergy. So this will have to do! :)
Number of Servings: 8

Ingredients

    1 10 oz can tomatoes with green chilies
    1 can black beans
    1-2 garlic cloves whole or minced in a jar
    1/3 cup fresh parsley or 2 Tblsp. dried
    2 3/4 cups quick oats
    salt & pepper or other seasonings if desired
    Buns, condiments and toppings

Tips

You may add 2 green onions chopped, if desired. I omitted them.


Directions

Heat oven to 450*. Add tomatoes with chilies, garlic, beans, bell pepper, carrots, and parsley to blender and blend until very well combined. Add bean mixture to a large bowl and combine with oats. Form into patties and place on baking sheet. Bake for 10-12 minutes, flipping once, the last few minutes. Serve on a toasted bun with your favorite condiments and toppings.

Serving Size: Makes 8 medium sized patties
