dried black beans, 1 cup
*Potato - Sweet, raw, 8 oz
Garlic powder, 2 tbsp
Curry powder, 3 tbsp
tastefully simple season salt, 0.25 tsp
Canned Tomatoes, 1 cup
*Asian Gourmet Lite Coconut Milk, 0.5 cup
*Long Grain White Rice (dry), 0.75 cup
water, 3 cups
peel, cut sweet potato.
place everything except rice and coconut milk in pot or crock pot.
cook on low to med heat until beans tender, about 1-2 hrs, adding more water as necessary.
after beans are tender, add rice and coconut milk. cook additional 15 min or until rice is done.
Serving Size: makes about 4 1cup servings
