Tweaked this from a dip recipe I saw for New Year's Day. Makes 10 (very filling!) tortillas, each one with 15g of fiber and 21g of protein. Tweaked this from a dip recipe I saw for New Year's Day. Makes 10 (very filling!) tortillas, each one with 15g of fiber and 21g of protein.

Ingredients

    1 lb. lean ground beef
    10.5 oz. can of Rotel
    1 medium red bell pepper, cored and diced
    1 medium onion, diced
    2- 15 oz. cans blackeyed peas
    4 oz container reduced-fat crumbled feta
    8 Mission low-carb tortillas

Tips

Lower the sodium by using dried blackeyed peas and fresh tomatoes.


Directions

1. In a large saucepan over medium heat, brown the beef, onion, and red bell pepper. Drain.

2. Mix in the blackeye peas and Rotel.

3. Spoon mixture onto tortillas, then sprinkle with a spoonful of feta.

Serving Size: Makes 8 stuffed tortillas
