3 Tbs. canola oil
2 cups Aunt Jemima Self Rising Cornmeal Mix
1 1/2 cups low fat buttermilk
1/2 tsp. baking soda
2 egg whites

Directions
Preheat oven to 425. Heat oil in iron skillet in oven for 3 minutes; tilt pan to coat bottom evenly. Combine dry ingredients. Add milk and egg whites, mix until blended. Add heated oil, mix well. Pour into hot skillet and bake for 20-25 minutes or until toothpick inserted in center comes out clean.
