Carly's Fabulous Soup

Introduction

Number of Servings: 9

Ingredients

    6 pounds of butternut squash
    2 medium sweet potatoes
    2 whole yellow bell peppers
    1 whole sweet onion
    1 tbsp olive oil (or coconut oil)
    2 cans of lite coconut milk
    2 cups of unsweetened coconut milk

Directions

cut butternut squash in half, bake in the oven face down at 350 degrees along with the sweet potatoes (I covered them whole in aluminum foil). Cook for an hour until softened to make it easy to scoop the meat out of the butternut squash.
-Chop up onion and bellpepper
-Saute onions and peppers in olive oil, add the butternut squash (NOT the peeling), add sweet potato
-Slowly add coconut milk
-Using a hand held blender, puree the veggies
-Keep adding coconut milk little by little checking consistency (I like it thick, but water can be added to make it thinner).
Continue cooking at a low heat, serve.

This soup freezes great, which is why I make such a huge batch when I cook it!
