Ingredients

    Slaw:
    1 medium green cabbage, finely shredded
    1/2 medium red cabbage, finely shredded
    4 medium carrots, grated
    6 radishes, thinly sliced
    1/2 C. toasted & chopped almonds
    1/2 C minced cilantro

    Dressing:
    1/3 C. water
    4 limes, juiced (reserve 1 TB lime zest)
    3/4 C. mayonnaise
    1 tsp. seeded and minced jalapeno peppers
    4 cloves garlic, minced
    3 dates, pitted and chopped
    dash of salt and black pepper

Tips

The amazing thing about cabbage is, the longer it sets with the dressing, the more flavorful it will become. Make this ahead of time and let it chill for a few hours for best taste.


Directions

SLAW:
Toss cabbages, carrots and radishes in a large bowl.
DRESSING:
Combine all dressing ingredients and blend well. Adjust salt and pepper to taste. Toss into slaw with remaining cilantro and almonds.
