Introduction

I reduced some of the fat and calories in Paula Deen's fantastic Green Bean Casserole by substituting lower fat alternatives for the butter, cheese, and cream of mushroom soup. Also, doubled the amount of green beans to make it more nutrient rich for the amount of calories. Ingredients

    5 tbs Smart Balance butter blend
    1/2 c diced onions
    1/2 c sliced fresh mushrooms
    4 c sliced green beans
    3 cups chicken broth
    1 can (10.75 oz) 98% fat free cream of mushroom soup
    1 small can (2.8 oz.) French fried onions
    1 c grated low fat cheddar cheese


Directions

Preheat oven to 350 degrees F. Melt butter in a large skillet and sautee the onions and mushrooms in it. Boil the green beans in chicken broth for 10 minutes and then drain. Add the green beans, mushroom soup, and fried onions to the sautee mix and season to taste (salt, pepper, and garlic powder). Stir well, then pour into a greased 1.5 quart baking dish. Bake for 20 minutes, then top with the cheddar and bake an additional 10 minutes, or until the casserole is hot and the cheese is melted.
