Vegetarian (Vegan) Chilli

Introduction

Number of Servings: 4

Ingredients

    1 onion (large) roughly chopped
    3 carrots chopped into cubes
    tin of cannellini (white) beans
    tin of black eyed beans
    chilli, to taste
    passatta - 1 carton
    1 vegetable oxo cube
    salt and pepper to taste
    Water

Tips

The chilli tends to taste better if it's made the day before and re-heated. The flavour improves when left and reheat slowly.


Directions

chop veggies and cook in a little olive oil (spray) until softened
add chilli to your liking, passatta, beans and stock
bring to boil, then simmer on a low heat for an hour - an hour and a half
add salt and pepper to taste
