New Year's Pasta

Introduction

I created this dish for guests on New Year's Day 2012! Only 600 calories per large serving, but tastes like a million! I created this dish for guests on New Year's Day 2012! Only 600 calories per large serving, but tastes like a million!
Number of Servings: 8

Ingredients

    1 large red onion, minced
    2 T. olive oil
    3 cloves of garlic, minced
    4 oz. Hormel crumbled bacon bits
    1 pt. grape tomatoes, sliced lengthwise
    1 tsp. crushed red pepper flakes
    8 oz. Neufchatel cheese
    1 cup nonfat milk
    8 buffalo chicken bites, sliced thinly
    1/2 cup St. Agur bleu cheese
    1 bag baby spinach leaves (about 4 cups)
    2 pounds of linguini or fettuccini

Directions

over low-medium heat, cook onion and garlic until very soft and caramelized.. about 15-20 minutes. Don't rush this step! Add bacon bits, grape tomatoes, crushed red pepper flakes and simmer about 10 minutes more. Add cream cheese and milk and allow to melt, stirring to combine. Add buffalo chicken pieces and the bleu cheese and stir to combine. Alow to heat through until bubbly. Add spinach and stir to wilt. Toss with pasta and serve! (can also be served separately as a sauce over the pasta)
