15 Bean Soup

Introduction

This is a basic bean soup, using the bag of Hambeens 15 bean soup, but NOT that terrible seasoning packet!! This is a basic bean soup, using the bag of Hambeens 15 bean soup, but NOT that terrible seasoning packet!!
Number of Servings: 12

Ingredients

    15 bean soup mix (any brand)
    3 qt water (12 cups)
    1 large onion, chopped
    2 15oz cans diced tomatoes
    1 teaspoon chili powder
    1 tablespoon garlic powder
    1 teaspoon oregano
    2 bay leaves
    1/4 teaspoon red pepper flakes (or to taste)
    1.5 tablespoons salt

    14oz package of turkey smoked sausage, cubed

Tips

Serve 1C of soup with 1/2 C brown rice for a filling meal and complete protein for just 200 calories!!


Directions

Place dry beans and water in a large stock pot. Bring to a boil, then cover and reduce to simmer for about an hour. Discard the "ham flavored" seasoning packet.

After an hour stir in all remaining ingredients except turkey sausage. Simmer for another 1.5 hours, or until beans are very tender and falling apart.

Meanwhile, sautee sausage cubes in a dry skillet until browning around the edges. Stir into soup before serving. (This step keeps the softer turkey sausage a bit firmer. If you don't care, just throw the meat in with all the other ingredients for the final simmer)
