EL Italian Sausage

Ingredients

    3 lbs Ground Pork (ground Pork Butt - well marbled)
    2 T Garlic (minced)
    4 1/2 t Paprika
    2 t Fennel (toasted & ground)
    1 T Salt (anything non-iodized)
    1 T Pepper (better if fresh)
    3 T Red Wine (dry preferred)

Tips

To make venison sausage, substitute 2 1/2 pounds venison and use just 1/2 pound of pork.


Directions

Mix spices first.
Pour over the ground pork & add wine.
Mix together thoroughly - don't squeeze the meat.
Use within 1 week or freeze for up to 3 months.
