Ingredients

1 boiler-fryer chicken, cut-up and skin removed
salt to taste
pepper to taste
garlic powder to taste
onion powder to taste
1/2 cup seasoned flour
2T olive oil
2T Smart Balance
2 medium onions, sliced
1 can (14.5 oz) chicken broth
Tips
Serve with rice, mashed potatoes or cauliflower, or cauliflower, chopped to resemble rice and sauteed with garlic.
Directions
Season chicken with salt, pepper, garlic powder and onion powder. Heat oil and Smart Balance in large skillet over medium high heat. Coat each chicken piece with seasoned flour and place in heated oil in skillet in batches. Brown well. Remove chicken from skillet. Place onions in skillet and saute for 3-4 minutes. Place chicken pieces back into skillet. Pour broth over pieces and bring to a boil. Reduce to a simmer and cover. Cook chicken for 45 minutes to an hour, until tender.
