Ranch Cheddar Chicken
1/2 C. Light Ranch dressing
1 T. Flour
4 Chicken breasts, boneless, skinless (4 oz)
1/4 C. Shredded sharp cheddar cheese
1/4 C. Grated parmesan cheese
If chicken breasts are thick, put on cutting board, cover with plastic wrap or waxed paper, and pound with flat side of meat mallet until even thickness. This will help the chicken cook throughly and evenly without drying out.
2. Mix together ranch dressing and flour.
3. Coat each chicken breast with mixture.
4. Place on a baking sheet.
5. Combine both cheeses in a bowl, then sprinkle over ranch coated chicken breasts.
6. Bake 25 minutes and serve.
