Mom's Oatmeal Pancakes

I grew up with these pancakes. My mom used to used to sneak wheat germ into the batter and we never were the wiser. You can add up to 1/2 cup wheat germ, bran, finely chopped hazelnuts, etc. You can also use sour milk (1 tbsp vinegar per each 1 cup of milk) instead of buttermilk. I grew up with these pancakes. Ingredients

1-1/2 cups oatmeal (oat flour, oat bran) with
2 cups buttermilk.
3/4 cup flour
1 tsp. soda
1 tsp. salt
2 beaten eggs
2 tbsp oil
up to 1/2 cup wheat germ (optional)
Directions
Combine oatmeal and buttermilk - set aside.
Sift together flour, soda, and salt. Stir into oatmeal mixture.
Add beaten eggs and oil.
Spray frying pan/skillet w/cooking spray and heat. Once hot enough to make a drop of water sizzle, pour batter by 1/4 cup. Turn heat down to medium/med-low. Once bubbles form on top turn and finish cooking.
This batter is too thick/dense to cook on high heat like most thinner pancakes. They'll burn before they cook inside if you do.
Makes 12 4" pancakes / 6 servings.
