Peanut Butter Oatmeal Energy Bars

Introduction

Ingredients

    2c old fashioned rolled oats
    1/2c whole raw almonds
    2/3c peanut butter
    1/2c honey
    11/2t vanilla extract
    1c rice crispies
    1/3c dried cranberries
    1/2t salt

Directions

Preheat oven to 350. Coat an 8" square pan with non-stick spray; set aside.

Toast oats and almonds in the oven on a baking sheet in a single layer until browned, 10 minutes.

Heat peanut butter, honey, and vanilla in a saucepan over medium heat until peanut butter melts.

Combine cereal, cranberries, salt, toasted oats, almonds, and peanut butter mixture. Press mixture into a prepared pan and let chill until firm, 10-15 minutes. Cut into bars and wrap in plastic wrap.

Serving Size: Makes 12 snack bars
