My Brekkie Muffins

Introduction

Number of Servings: 1

Ingredients

    1 fresh whole egg, medium
    50 grams finely chopped or grated zucchini
    30 grams chopped mushrooms
    20 grams finely chopped onion or shallot
    10-20grams crumbled ricotta or cottage cheese
    Salt and Pepper, to taste

Tips

These can be frozen, and then zapped in the microwave on other days if in a rush, so make a few at a time and freeze these.
Can also add any veggies, so long as within your limit/allowance.


Directions

Preheat oven to 190-200C.

Mix together all the vegetables, then pour in the beaten egg & Salt and Pepper. Mix together.

Pour into two muffin spaces on a muffin pan. Sprinkle a little of the crumbled ricotta on top.

Bake for around 30 minutes, or until muffins are cooked and golden on top.

Eat and enjoy.

Serving Size: Makes 2 medium sized muffins
