Caramelized Onion Hummus

Introduction

This is a yummy Hummus. It is very easy to make from dried beans using a crock pot and the caramelized onion adds a nice sweetness. This is a yummy Hummus. It is very easy to make from dried beans using a crock pot and the caramelized onion adds a nice sweetness.
Number of Servings: 8

Ingredients

    1/2 c. dried chickpeas
    11/2 c. water
    1 large sweet onions, thinly sliced
    1/4 cup olive oil, divided
    3 Tbsp. lemon juice
    2 Tbsp. tahini
    2 garlic cloves, minced
    salt and pepper to taste

Directions

1. Place the chickpeas and water in a crock pot. Cook on low for 3 hours, or until tender. Place the chickpeas and cooking liquid in a blender or food processor and blend to make a smooth paste. Add more liquid if needed.
2. While the chickpeas are cooking heat 2 tablespoons of oil, sauté onions until softened. Reduce heat to medium-low; cook, stirring occasionally, for 30 minutes or until deep golden brown.
3. Add the onions, lemon juice, tahini, garlic, salt, pepper and remaining oil to the bean mixture. Process for 30 seconds or until smooth. Serve with baked pita chips or raw vegetables.
Yield: approx 2 cups
