Introduction

A mix-up of foods I had on hand! Quick and filling. A mix-up of foods I had on hand! Quick and filling.
Number of Servings: 6

Ingredients

    1 can pinto beans, drained and rinsed
    1 can diced tomatoes with green chilies
    1 cup frozen white corn
    1/4 cup water
    1 cup fresh spinach, chopped
    Chili powder, cayenne, and cumin to taste
    Salt and pepper to taste

Directions

Stir together beans, tomatoes, and corn over medium-high heat. Add water and seasonings; stir well and simmer 3 minutes. Toss in spinach and cook until water is mostly evaporated. Serve over rice.

Serving Size: Makes about 6 1/2-cup servings
