Rumbamel's Beef Stroganoff Soup with Barley

Introduction

I had some evaporated fat free milk that needed to be used and saw the cream of mushroom soup. I immediately though of stroganoff. I wish I had ground meat to make this better, but this will do in a pinch. It was tasty with a crescent roll and a piece of sharp cheddar on top. Ingredients

    -1 C diced white onions
    -1 clove fresh garlic, minced
    -1 bag Morning Star Meal Starters crumbles

    -1 small can of cream of mushroom soup, like Aldi brand
    -1 can, 12 oz, fat free evaporated milk
    -1 can, 4 oz, mushrooms, drained and diced/chopped
    -1 t ground black pepper
    -1-2 t worchestershire sauce
    -1/3 C dry quick cooking barley

Directions

---Saute the garlic and onions in a large skillet over med. low heat before adding the Morning Star crumbles. Stir and continue to cook over low heat stirring every once and a while until browned.

--MEANWHILE, stir the other ingredients EXCEPT the barley in a med. pot over medium high heat. Bring to a boil stirring almost constantly so the milk doesn't scald. At the barley and cook for about 10 min. on simmer or until barley is done. Add the crumble onion mix and stir well.

---Serve with cheese and bread if desired (not in the nutrition).

---Makes 5 1/2 servings of 1 C each.
