The original recipe called for Wind & Brown Rice, but if you can't get that, whole grain brown rice works, too. It also called for Shitake mushrooms which I did not have access to, so I substituted white mushrooms. It can also be made vegetarian by substituting vegetable stock for chicken stock. Ingredients

Country Crock, Shedd's Spread Country Crock Light (Soft), 2 Tbsp,
Garlic, 2 cloves chopped (I used 2 tsp water packed in a jar
Onions, raw, 1 medium (2-1/2" dia) chopped
Thyme, ground, .5 tsp
*Brown Rice, long grain, 1 cup
Chicken Broth, 4 cup
Mushrooms, fresh, 1 cup, chopped coarsely
Salt, .5 tsp
Pepper, black, .25 tsp
Almond Breeze Almond Milk, Unsweetened Original, 2 oz or fat free milk. I like the Almond Milk because it is thicker like cream.

Directions
Melt 1 tbl margarine in a large saucepan over med. heat. Add garlic, onion, & thyme and cook for about 2 min. until tender. Add rice and stir to mix. Add broth and bring to a boil. Reduce heat, cover and simmer until rice is tender, but not over-cooked. (about 45 min.) Melt the other 1 tbl margarine in a medium skillet over med. heat. Add mushrooms and cook for 1 min. or until just tender. Stir mushrooms, salt, pepper and milk into soup and cook until heated through. Serve hot.
Serving Size: This makes 6 one cup servings which is pretty thick.
