Easy Whole-Wheat Pizza Dough

Submitted by: COLLEENKELLEY

Introduction

Great for a large pizza, or divide into mini-crusts for a personal sized pizza. Since it only rises once, it's much quicker than a normal, from-scratch pizza crust. Ingredients

3/4 cup plus 2 tablespoons warm water (105 -115 degrees)
1 packet (2 1/4 tsp) active dry yeast
    1 tsp honey
    1/2 tsp salt
    1 cup whole-wheat flour
    1 cup bread flour
    2 tablespoons yellow cornmeal
    2 tablespoons olive oil

Tips

Nutritional info doesn't take into account any toppings you might add - this is strictly the crust only! This recipe makes approximately one pound of dough and is adapted from a recipe I found on www.eatingwell.com.

Directions

1. Stir water, yeast, honey and salt in a large bowl; let stand until yeast has dissolved, about 5 minutes. Stir in flours and cornmeal until dough begins to come together.

2. Turn the dough out onto a lightly floured work surface. Knead until smooth and elastic, about 10 minutes. Alternately, you can knead using your stand mixer's dough hook for about 5 minutes or until smooth and elastic.

3. Place the dough in an oiled bowl and turn to coat. Cover with a clean kitchen towel and set aside in a warm, draft-free place until doubled in size, about 1 hour.

4. Preheat oven to 450. Roll dough into a ball and stretch out over a pizza pan. Brush with oil and bake 5 minutes. Remove from oven, top with desired toppings, and return to oven for another 15-20 minutes or until cheese is melted and bubbly.

Serving Size: Makes 8 slices or 4-6 mini pizzas.
